Switch stock tracking on per product, set quantities per location, and choose whether customers can keep buying after you sell out.
The Inventory section of the product editor controls the stock behaviour of each product — and it is per variant when a product has options.

Track inventory
On by default for physical products: the shop counts down as orders come in and refuses (or flags) sales past zero. Turn it off for anything effectively unlimited — made-to-order pieces, dropshipped lines you never hold.
Quantity per location
Available quantity is tracked per stock location. With one warehouse it is a single number; with several, each location gets its own row. Transfers between locations are handled under Inventory → Stock Transfers.
Allow backorders
The sellout decision:
Off — at zero stock the product shows out of stock and cannot be ordered.
On — customers keep ordering past zero (“Continue selling when out of stock”), and the order counts as a backorder you fulfil when stock lands. Incoming purchase orders show against these in Inventory Planning.
Tips
Made-to-order plus backorders-on is the right pair — customers buy, you make, nobody sees “out of stock”.
If an order fails with an “insufficient stock” error, this section is why: either the quantity is wrong or backorders are off.
